Crispy Spiralized Sweet Potatoes

I have spent approximately ten years trying to make CRISPY sweet potato oven-fries to with no avail. Well those days are over thanks to the handy Spiralizer that everyone should have in their life.

This is my trusty method , you can use one sweet potato or twelve; just adjust the amount of olive oil and salt depending on the amount you are making.

Heat oven to 400 and line a baking sheet with aluminum foil and set aside.

Using the smallest blade spiralize the sweet potatoes, skin on.  Toss with olive oil (roughly a tablespoon for every potato) and spread out on the baking sheet (not every strand needs to be in contact with the pan).  Bake for 20-25 minutes or until they start to brown.

Remove from oven and sprinkle with sea salt and let cool.  As they sit they begin to crisp up….this step is KEY.

Try to not eat the whole pan standing up- I dare you.
